Prawn & Chive Dumplings
Ingredients: (Serves 4)
- 300g raw prawns, finely chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp chopped chives
- Dumpling wrappers
Method:
- Mix prawns, soy, sesame oil, and chives.
- Fill wrappers, seal, and steam for 6–8 minutes.
- Serve with soy dipping sauce and a glass of Pinot Grigio.
Wine pairing:
Red Hill Estate’s Cool Climate Pinot Grigio
Why it works:
The wine’s citrus and pear lift the delicate prawn filling, while its minerality mirrors the freshness of the dish.

- Occasion: Seafood, pasta, Asian takeaway – or simply passing bread around the table.
