The luscious nature of this wine is shaped by a clean line of acidity and supported by a rich texture and persistence of flavours achieved by partial fermentation using indigenous yeasts with a touch of barrel stirred lees – this brings an elegant cashew creaminess through the centre palate that finishes with notes of zippy honey.

      A low yielding harvest of medium sized berries from 10 year old vines

      Harvested in the cool of the early morning to retain flavour composition. Gentle press through nag press, so as to not pick up any colour from the skins. then racked into barrels as juice and allowed to ferment. Once fermented each barrel was lees stirred to bring an elegant creaminess through the centre palate.
