Description
An elegant Peninsula Shiraz that exhibits aromas of raspberry, mulberry and spice. The palate does a remarkable job of presenting complimentary notes of red cherry and white pepper integrated with silky tannins and balanced cedar oak. This wine will continue to develop in depth and flavour with careful cellaring for 10+ years.

Our Single Vineyard Shiraz comes from the Mossolini Vineyard which is situated in Merricks North, Balnarring. With 80m in elevation and a gentle North West slope the vines run north – west.
Soil type is brown Merricks clay with alluvial deposits of iron stone with a granite seam upon a basaltic parent rock. Shiraz clone is FXD1V7
- Vineyard Notes
Excellent winter and early spring rainfall filled the soil profile. Weather conditions through summer were warm. Mild weather through March resulted in steady ripening.
- Winemaking
The fruit is hand harvested and fermented in open fermenters. Hand plunged and left on skins for 7-10 days. Once pressed off skins it is then racked to barrel to go through malolactic fermentation and aging.
Following 18 months in French oak barrels, only the barrels that are judged suitable for this Individual Vineyard range are selected. A variety of oak coopers and toasting levels are used to add oak complexity to the wine and the Shiraz is gently racked from barrel prior to final blending and bottling without filtration. This wine is then given bottle maturation prior to release.

With aromas of plum, blackberries and licorice in the glass, this wine also exudes flavours of licorice, blood plum, blackberry and mulberry, finishing with silky velvet tannins.
Our Single Vineyard Shiraz has depth and layering of flavours and structure that will enhance in the glass as it breathes.
