2006 Bimaris Pinot Noir Tasting Notes
Probably the most beguiling grape in the world today, it is used in the great wines from the Burgundy region in France which can command very high prices. When grown in a suitable region, it produces beautifully perfumed wines with great texture and complexity.
Fruit This vintage of the Bimaris Pinot Noir is made entirely from Mornington Peninsula grapes creating a more elegant cool climate style.
Maturation This wine was mostly fermented rapidly in stainless steel tanks, gently pressed and transferred to French oak barriques (10% new). 100% malolactic fermentation occurred (this is standard for most red wine styles). This treatment adds only a subtle level of oak complexity to the wine, making it a very fruit driven style.
Technical Analysis Alcohol 14.0%.
Best Drinking While this wine was designed to be consumed in the first few years of its life, it continues to improve in the bottle, adding gamey notes to the bright fruit flavours.
Bouquet and Palate The nose has a great blend of red and black fruits, including cherries and fruits of the forest with a lovely perfumed lift. It has a rich palate of plums along with a slight gamey edge with soft tannins and clean acid to finish. |
