2005 Red Hill Estate Briars Cabernet Tasting Notes
Cabernet Sauvignon is to the red winemaking world what Chardonnay is to the white, being made all over the world. Only a few parts of the Mornington Peninsula are capable of consistently ripening Cabernet Sauvignon.
Best Drinking The Red Hill Estate Briars Cabernet Sauvignon drinks well only after a full year in bottle. There are very few decent cool climate Cabernets that do otherwise. The longer you leave this wine, the more enjoyment you are likely to derive. Ten year old Red Hill Estate Cabernets are still looking superb. We need a crystal ball to project further into the future but it is likely they will go for 15-20 years. If you do drink this when young, splash it into a jug and then pour back into the bottle before serving.
Bouquet and Palate Cassis and black currant aromas and flavours are complemented by anise, cloves and cedar. There is wonderful length of flavour and plenty of well stuctured tannins which build along the length of the palate. This wine is best tamed by food with proteins when young and is great with strongly flavoured meats, rich stews and cheeses.
