2007 Bimaris Sauvignon Blanc Tasting Notes
Sauvignon Blanc, with its distinctive fresh, zesty, herbal and tropical fruit is a favourite of many people. It is refreshing on a warm day but also goes well with a great range of salads.
Fruit This wine is made from grapes grown in a diverse range of predominantly cool climate wine growing regions across Chile and Australia.
Maturation Fruit batches and varieties were fermented in stainless steel fermenters at 15C for 3 weeks . The long cool ferments helped retain natural fruit flavours and aromas. The different parcels were then blended, cold stabilised and filtered prior to early bottling to retain freshness.
Technical Analysis Alcohol 12.5%.
Best Drinking This wine is designed to be consumed in the first few years of its life, as its major asset is its fresh, lively fruit. Try drinking it on its own or with fresh salads and seafood.
Bouquet and Palate The wine appears pale straw with youthful green tinges in the glass. The aromatics in this wine are typical for this wine, displaying plenty of fresh passionfruit, gooseberry, citrus and sweet herbacousness. The palate has an abundance of ripe tropical fruit flavours, balanced by a clean, zesty acid on the finish. |
