2004 Bimaris Shiraz Tasting Notes

Shiraz is undoubtedly Australia’s most famous wine grape and it is not difficult to see why It can produce wines that are ponderously huge in structure, longevity and price. It can also produce wines that are generous but at the same time soft and approachable (also affordable!). This is such a wine.

Fruit
This wine is made from grapes from one end of Victoria to the other! It is a blend of wild berries from elevated Central Victoria with plump, soft Swan Hill material and lifted sweet spice from the Mornington Peninsula.

Maturation
This wine was fermented rapidly in stainless steel tanks, gently pressed and transferred to American oak barriques (10% new). 100% malolactic fermentation occurred (this is standard for most red wine styles). This treatment adds only a subtle level of oak complexity to the wine, making it a very fruit driven style.

Technical Analysis
Alcohol 13.5%.

Best Drinking
This wine was designed to be consumed relatively young, however it should hold well for 3 – 5 years.

Bouquet and Palate
A classic cool-climate shiraz nose of spice and blackberries, the palate is plump, soft, full and long with an extra dash of plums and cherries. This is a great wine to enjoy on its own, or with a range of meats, such as lamb, beef and pork and stews of medium strength.
